Cauliflower Rice Recipe
For all those who love rice, here’s a delicious dish that you can make at home sans any rice! Don’t feel cheated, as after eating this dish, you wouldn’t miss the rice at all. Cauliflower Rice is a delicious dish which is cooked using the crumbled cauliflower, red bell pepper, mushrooms and baby corns. This is an easy-to-make main dish recipe that’s low in carb as well as calories. This is an amazing way to replace grain in your diet and become healthier. This is an excellent way to adopt cauliflower in your diet and make a delicious dish. Also, this cauliflower recipe can be converted into a keto dish by opting for fewer quantities of bell pepper and baby corns, as they are rich in carbs. Instead, you can add some herbs and broccoli in it, and make it into a keto recipe. It’s an interesting main dish recipe that can even be packed for tiffin as well and is a boon for weight-watchers and diabetics.
All you need is-
1 red bell pepper
250 gm baby corn
250 gm mushroom
3 sprigs spring onions
1 tablespoon soy sauce
1 teaspoon salt
2 pinches black pepper
HOW TO PREPARE
Wash And Cut Cauliflower Into Florets
To prepare this delicious dish, cut off all the leaves and stem of the cauliflower and chop it up into smaller pieces. Wash thoroughly in case of any dirt or worms.
Grind Cauliflower Till Crumbly
Add the cauliflower bits in batches into your food processor or a dry grinder. Blitz till they become crumbly. Do not add any water at all to the cauliflower this is a dry grind or else it will be a disaster.
Chop All The Other Veggies
Once you have the cauliflower into this fine crumbly rice or cous cous like texture leave it aside and chop all the other vegetables and ingredients.
Roast Crumbled Cauliflower In A Wok
Heat some oil in a pan or wok, and add the cauliflower so you can cook/roast it for about 5-7 minutes. Keep stirring as the cauliflower won’t take very long to cook.
Saute With Garlic And Spring Onions
Add the chopped garlic and let it cook a bit, then add the spring onions, the whites and some of the greens, keep some greens to garnish later and mix it all together.
Cook Bell Pepper And Baby Corns
To this, add the chopped red bell pepper and baby corns. Sprinkle a little salt and black pepper in the wok and season them. Stir and mix well.
Finally, Add Mushrooms And Cook For Another 3-5 Minutes
Add the mushrooms and again season them with salt and pepper before they cook. Once they cook and start to release their water mix it into the other ingredients. Mix everything together and lastly add the soy sauce.
Garnish With Spring Onions And Serve Hot
Once it’s all mixed together, garnish with the leftover spring onions, serve hot and enjoy!
