Let’s have Usal Treat with Moong Usal and Sweet Potato Usal

Moong Usal

If you are looking for a unique side dish recipe, then try this Moong Usal. It is a Goan specially and is made for fasting on festive occasions. Prepared using coconut, jaggery and green chillies; this side dish recipe is loaded with nutrients. Moong beans are protein rich and is a good option for vegetarians. It’s sweet and spicy, and is something that you will enjoy for sure.

All you need is-

1 cup green moong daal

1/2 cup grated jaggery

1/2 cup grated coconut 

1/4 cup ghee

1 teaspoon powdered green cardamom 

2 chopped green chilli 

5 curry leaves 

1 teaspoon salt

HOW TO PREPARE 

Prepare the tempering for moong usal

Soak green beans in water for 8 hours. Next, put a pan over medium flame and heat ghee in it. When the ghee is hot enough, add cumin seeds in it along with chopped green chillies and curry leaves.

Fry the moong beans

Now, add green beans and saute well. Then, add salt and water in the pan and cook until the beans are soft.

Cook beans with jaggery and coconut 

Once the moong beans are cooked, add grated jaggery and coconut, and mix well. Cook for 2 more minutes and then add cardamom in it. Stir to mix well and serve hot.

Sweet Potato Usal

It takes only 25 minutes to prepare and contains only 219 calories 

Usal is a popular breakfast recipe of Konkani cuisine and is known to be super-healthy. Traditionally prepared using bean sprouts, it might look like a sprout salad to some, however, its quite different from it. Here is another usal recipe which is prepared using sweet potatoes, peanuts, grated coconut and the a few spices. This is a special dish prepared for those who are fasting and will keep you energetic throughout the day during fasting. Sweet Potato Usal is prepared using sans any beans and potatoes. It’s an interesting side dish recipe that you can enjoy in lunch as well. So, what are you waiting for? 

All you need is-

3 sweet potato

1/2 cup grated coconut 

1/2 cup peanut

1 teaspoon ghee

1 teaspoon cumin seeds 

1 teaspoon green cardamom 

3 green chillies

5 curry leaves

1 teaspoon salt

HOW TO PREPARE 

Cut the sweet potatoes 

Wash sweet potatoes and peel of their skin. Cut into small chunks and soak them in enough water.

Prepare the tempering 

Put a pan over medium flame and heat ghee in it. Next, add the tempering of cumin seeds, chillies and curry leaves.

Fry the sweet potatoes 

Now, add the sweet potatoes in the pan and stir to mix well. Then, add salt and water in it and cook well till the sweet potatoes are soft. Finally, add crushed groundnuts and grated coconut. Mix well and close the lid and let it cook for a minute. Add cardamom powder and mix well. Serve hot.
